Immune Boosting Soup
I’ve caught a cold which I thought might happen as I’ve been going maskless in certain places for the first time in 2 years. I’ve tested negative for Covid twice so I’m dealing with an average upper respiratory infection but often a cold with a cough goes to my lungs and hangs out there for weeks, so I’m trying to take good care of myself.
When I’m feeling like I’m coming down with something I make this soup. It’s inspired by Mississippi Vegan’s Immune Boosting Soup but I’ve made a few changes, adding more greens and using the veggies I have on hand. It’s delicious and feels like (while it’s not going to cure me) it’s definitely supporting my body to knock out that virus.
The immune system boosting power of plants is pretty incredible. Garlic, turmeric and ginger are the health-promoting trifecta in this soup and together, they fight inflammation and support white blood cells in fighting off viruses.
